Recipe - Fettuccine Pollo Aromatico

Recipe - Fettuccine Pollo Aromatico

Ingredients:

  • 2 (5oz.) chicken breasts, bone and skin removed
  • 1/4 small onion, chopped
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh rosemary
  • 1/2 teaspoon thyme
  • 1 cup heavy whipping cream
  • 2 tablespoons butter
  • 1/2 pound fettuccine, cooked
  • 1 cup mozzarella cheese


Directions:

  1. Saute chicken in the butter over medium heat for 5 minutes; add onions, cream and all the seasonings. 
  2. Let cream mixture come to a boil and add fettuccine. 
  3. Add cheese and toss until sauce clings to pasta. Serve hot.

Classic Fettuccine Bolognaise

Ingredients

900 gm Fettuccine, cooked
400 ml Bolognaise sauce
4 Tbs Grated Parmesan cheese

Cooking method:

To cook Fettuccine, refer to pasta coking procedure, or you can follow instruction shown on the package.

Use the Bolognaise base as pre-cooked as it can be store refrigerator up to 3 days.

Heat Saute pan, add Bolognaise and bring to boil. Add cooked Fettuccine; continue cooking by stirring the pasta until completely cooked.
Remove from heat, transfer to appropriate pasta bowl and sprinkle with Parmesan cheese and serve immediately.

Serving for 4

Fettuccine Mushroom and Spinach in Tomato Basil Sauce

Ingredients:
  • 220 gm Fettuccine, cooked
  • 30 gm Spinach, raw
  • 30 gm Button Mushroom, cut quartered
  • 1 Tbs Green Onion
  • 1/2 Tbs Garlic, chopped
  • 1 Tbs Fresh Basil, roughly chopped
  • 100 ml Red Tomato Sauce
  • 1 Tbs Olive Oil

How to cook:

  1. Heat olive oil in a sauté pan over medium heat.
  2. Put garlic, spinach, basil and mushroom.
  3. Cook for about 1 minute, do not over cook. Add marinara sauce and bring to boil, after that adds fettuccine and green onion.
  4. Adjust seasoning with salt and pepper and black pepper coarse also sprinkle with Parmesan cheese if you like. Serve hot.

Double Pasta with Spinach and Mushroom Marinara

Ingredient:
225 gm Spaghetti, cooked
225 gm Penne, cooked
90 ml Tomato sauce
30 gm Spinach, fresh
30 gm Button Mushroom
Parmesan cheese for garnish

Cooking Methods:
  • In a medium saute pan, bring to boil tomato sauce.
  • Add mushroom and spinach, dont over cook.
  • Add pasta stir using spatula, laddle some water and continue to cook for 2 munites.
  • Garnish with fried spinach leaves.
When make pasta, ensure that the amount of sauce must be equal. Add water when neccesary, so pasta will be looking shiny. Great pasta is very depend on sauce base and pasta must freshly boiled.
