How to Make Salted Fish Fried Rice [Indonesian]
Ingredients:
400g cooked rice, chilled refrigerator overnight
75g large prawns, shelled and divined
50g salted fish, cut into pieces and soak in water
2 tbsp frozen peas
2 each eggs
3 tbsp oil for frying
1 tsp sesame oil
Seasonings:
1 / 2 tsp salt
1 / 2 tsp chicken powder
1 / 4 tsp sugar
1 tsp soy sauce
Pepper to taste
Trimmer:
1 tbsp chopped spring onion
1 tbsp chopped coriander leaves
1 tbsp chopped red chilli
Cooking Methods:
1. Heat oil in wok until hot, drain salted fish prior to fry crisp and yellowish. Set aside.
2. Heat the remaining oil, add sesame oil. Saute the shrimp until it changes color. Pour chilled rice and stir until blended. Mix the spices. Stir again until well blended spices.
3. Make a hole between rice, beaten eggs, pour in the middle of rice. Put pepper to taste, stir in a little rice with egg and then leave 1-2 minutes. After that, stir until the egg mixture. If look too dry, can add a little oil. Add frozen peas and finely sliced lettuce and stir until vegetables are cooked enough. Finally add fish and continue frying. Taste before serving.

Liver Fried Chicken Recipe

Ingredients:
250 gram white rice, room temparature
100 gram chicken liver, boiled and cut into cube
1 each leeks, cut into 1cm
2 Tbs Cooking oil
Blended ingredients:
2 each shallots
1 each garlic
3 each red chili
Salt and pepper as needed
Cooking Method:
Gather all ingredients including main item such rice and liver.
Heat oil on the skillet or wok and sauté blended ingredient until aroma comes out good.
Add rice and remining ingredients, continue cooking until the rice hot and season with salt pepper.
Remove from heat and serve hot with cucumber pickles, shrimp crackers, and fried chicken or any other accompaniment.

Sauté squid, shrimp cook for some time than add garlic, chili and continue cooking until aroma comes out. After that, put in egg, stir and finally put in rice, soy sauce and oyster sauce. Seafood Fried Rice Ala Chinese - Nasi Goreng Cina

2 cups Steamed Rice
4 ea. Medium Prawn, peeled
1 ea. Squid, cut into 1x1 inch
30 gm Dory Fillet or Snapper, diced
2 ea. Garlic, chopped
5 ea. Shallots, diced
1 ea. Dry Chili, thin cut
1 ea. Tomato, thin sliced
1 ea. Eggs
1 Tbs Salted Soy Sauce
1/5 tsp Sesame oil
2 Tbs Cooking Oil
1 tsp Salt
1 tsp Pepper
Cooking Method:
Heat oil in a WOK over high flamed. Add seafood, garlic, shallots, chili and tomato and until aroma comes out, add egg and stir with spatula very quickly to avoid burning.
Add rice, soy sauce and continue stir until all ingredients incorporate or mix well. Add salt and pepper, adjust seasoning. Just before remove from heat, add sesame oil.
Serve fried rice on plate, garnish with shredded lettuce and cut green onion.
Place rice on tray and keep it in room temperature and let it cool before cooking. Reduce amount of water when cooking the rice from regular amount that you used. It will be obtain the excellence fried rice.

Singapore Chicken Porridge
Porridge
250 gram Rice
1.5 Lt Cold Water
2 cm Ginger, sliced
Salt, as needed
Cooking Method
In a medium stock pot, combine all ingredient. Bring to boil and simmer for about 10-minutes or until becomes porridge. During cooking process stir porridge often to avoid bottom-sticked, check thickness. You may add or reduce water to adjust the thickeness as your desire.
Serving:
A bowl of porridge topped with Sliced Chicken, Sliced Green Onion, Fried Shallot and Garlic Oil(mixture of fried garlic and oil).
To get slice chicken first you need to boil chicken. After cooked, cool and cut into slice. Chicken stock can be used to boil rice instead of water if you like.
