Stir-fried Chicken in Shrimp Paste Sauce

Stir-fried Chicken in Shrimp Paste Sauce or ayam goreng sambal terasi
is a quick and easy cooking. The dish is suitable to be served with
steamed rice and vegetables. Below is the recipe and cooking method
how to cook stir-fried chicken in shrimp paste sauce.

Ingredients:

  • 1 whole chicken cut into 12 pieces
  • 1 cm galangal, smashed
  • 2 each bay leaves
  • 3 each lemon leaves
  • 2 each tomato, cut into 8 each
  • 2 tbs soy sauce

Blended ingredients

  • 7 each red chili
  • 5 shallots
  • 4 garlic cloves
  • 2 cm ginger
  • 3 each candle nut
  • 1/2 tsp fried shrimp paste

Cooking methods:

  1. Wash and clean chicken, season with salt and let stay for awhile. 
  2. Fried half cooked and put aside.
  3. Saute the blended ingredients until aroma comes out, add galangal,
  4. bay leaves, lime leaves, tomatoes and soy sauce.
  5. Return fried chicken into pan, cook until tomato becomes sauce and
  6. ingredients blend well with the chicken.
Remove from heat and ready to serve.
