BBQ Chicken Ala Eastern - Ayam Bakar

To prepare the recipe, you need to boil the chicken into seasoned stock before grilling. To get a perfect taste, i recommend use a charcoal or flamed grill. Served with steam rice and shrimp paste sauce or sambal terasi. and also fresh mixed green salad or lalap.

1 medium chicken, about 1000gm
1 ginger, smashed
1 Lemon Grass, smashed
3 bay leaves
5 red chili, blend
2 litre water
2 tbs cooking oil

Ingredients to blend:
2 pcs garlic
4 pcs shallots
5 pcs candle nut
1 Tbs Coriander seed
1 cm tumaric, fresh
salt pepper to seasoned

For Glazing: Garlic+Soy sauce+coryander pw in oil

How to cook:
  • Wash and clean chicken and cut into quater.
  • Heat oil in the lagre pan, add ginger, lemon grass and chili.
  • Add blended ingredient and cook 2-3 minutes.
  • Pour water in to pot, drop the chicken in, bring to boil and simmer for 25-30 minutes.
  • Grill chicken on charbroil, glaze with soy sauce. Cook until brown in color.

Serving for 3-4.
