To get high quality cooked chips, following some important ponits:
- Chips or French fries must be frozen.
- Oil temperature 375˚F (Straight, Crinkle, wedges cut) cooking time 4 minutes.
- Oil temperature 350˚F (Shoestring and Curls cut) cooking time 3 minutes.
- Holding time is 3 minutes.
- One time cooking only, do not re-fry chips
