Chips Cooking Procedures

To get high quality cooked chips, following some important ponits:

  • Chips or French fries must be frozen.
  • Oil temperature 375˚F (Straight, Crinkle, wedges cut) cooking time 4 minutes.
  • Oil temperature 350˚F (Shoestring and Curls cut) cooking time 3 minutes.
  • Holding time is 3 minutes.
  • One time cooking only, do not re-fry chips
