Spicy BBQ Chicken - Indonesian

Spicy BBQ Chicken - Indonesian is one of the most famous food in Indonesia. People used to call for this cooking "Ayam Bakar Pedas". Usually, BBQ chicken is serve with spicy chilli sauce "Sambal" and fresh green "salads" and also white rice.


900 grams whole chicken, cut into 4 parts
2 tablespoons lime juice and 1 teaspoon salt
6 stalks lemongrass crushed
3 lime leaves
3 cm ginger, Crushed
3 tablespoons thick tamarind water
10 tablespoons Indonesian soy sauce any brand
200 ml of water
2 tablespoons cooking oil
150 grams of minced chili

To blend:
5 spring onions
3 cloves garlic
1 tablespoon toasted coriander
1 teaspoon toasted cumin

Cooking methods:
1. Wash chicken, marinate with lemon juice and salt, let sit for a while, wash and drain rinse.

2. Heat oil and saute minced chilies and spices until fragrant,
add chicken, lemon grass, lime leaves and ginger, cook until chicken turns
color, add soy sauce, water and cook until chicken is tender and
gravy thickens, remove from heat.

3. Grilled chicken over hot coals or as desire temperature, remove from heat.

4. Serve warm with white rice and salad vegetables.
